Chef Fatima El Mansouri, with over 20 years of experience in Moroccan and Oriental cuisine, is among Morocco’s most talented female chefs. After 10 years in Lebanon perfecting her Oriental craft, she now blends Moroccan tradition with refined Eastern flavors.
Chef Ayoub Ben Hammi, trained at the Théodore Monod Culinary School in France, is a specialist in international cuisine. His style combines global inspiration with Mediterranean and Oriental influences, creating a modern and generous fine-dining experience.

Trained at the Théodore Monod Hotel School in Antony, Chef Ayoub Ben Hammi honed his craft alongside renowned French chefs such as David Le Quellec, Éric Chavot, Julien Gasperi, and Arnaud Demerville. These prestigious experiences shaped his unique style — generous, flavorful, and distinctly contemporary.
At Le Léopard Marrakech, he presents a creative cuisine where global flavors meet French and Oriental influences, guided by a spirit of sharing and pleasure. Each dish highlights the quality of its ingredients and tells a story between tradition and modernity — offering a truly unique gastronomic experience in Marrakech.

Fatima El Mansouri

With over twenty years of experience, Chef Fatima El Mansouri is recognized as one of the most talented ambassadors of Moroccan gastronomy. Trained in some of Morocco’s finest establishments, she then spent ten years in Lebanon, where she mastered the art of Oriental and Levantine cuisine.
Today, her cooking celebrates a harmonious fusion between Moroccan traditions and Eastern influences. Her signature dishes — lamb tagine with dried fruits and wild honey, royal saffron couscous, and reinvented oriental mezzes — reflect her refined expertise and deep respect for culinary heritage.
Each of Chef Fatima’s creations tells a story: that of Morocco — its warmth, its spices, and the timeless beauty of its culinary art.


Ayoub Ben Hammi
(Specialist in International Cuisine)
Trained at the Théodore Monod School of Hospitality and Culinary Arts in Antony, Chef Ayoub Ben Hammi built his expertise alongside renowned French chefs such as David Le Quellec, Éric Chavot, Julien Gasperi, and Arnaud Demerville.
